Ingredients
- ¾ cup shredded zucchini (excess water removed)
 - ½ cup shredded apple (excess water removed)
 - ½ cup shredded carrot (excess water removed)
 - 4 tbsp butter, melted
 - ¼ cup applesauce
 - ½ cup sugar
 - 2 eggs
 - 1 tsp vanilla
 - 1½ cups white whole wheat flour
 - ½ tsp baking soda
 - ½ tsp baking powder
 - 1 tsp cinnamon
 - ½ tsp ginger
 
Directions
- Mix first 8 ingredients in a large bowl and stir until well combined.
 - Add remaining ingredients and stir until just mixed.
 - Scoop into greased muffin tins.
 - Bake at 350 degrees F for 20-25 minutes or until inserted toothpick comes out clean.
