Wild rice salad

Spring is finally here!

Amy Ansaldo, RD, LD, one of our inpatient dietitians, shared her recipe for wild rice salad to kick off the warmer weather. The recipe is from her recently published low-sodium cookbook, Happy Taste Buds and Healthy Hearts.

Wild rice salad is a nutrient-dense dish that combines antioxidant-rich whole grains, heart-healthy fruit and high-quality protein.  

Wild Rice Salad

Ingredients

Serves 6-8
Prep Time: 15 minutes
Total Time: 60 minutes

  • 1 box of wild rice
  • 8 oz smoked gouda, cubed or diced
  • 3 cups of red grapes, sliced in half
  • 1 sweet onion, chopped
  • 1 red bell pepper, chopped
  • 1 to 2 cups of ranch dressing

Instructions

Step 1. Cook wild rice according to package instructions, about 45 minutes.

Step 2. While rice is cooking, cut up gouda, grapes, onions and pepper. (If you do not like raw onion or pepper, add to rice pan in final two minutes to soften).

Step 3. When rice is done, drain and add to a large bowl. Add all other ingredients and combine while rice is hot.

Step 4. Add 1 cup of ranch and add more, depending on desired creaminess.

Step 5. Refrigerate for 2 to 3 hours before serving.
