Turkey Gyro

Turkey gyro

Looking for a quick, healthy and delicious dinner option this back-to-school season?

Amy Ansaldo, RD, LD, one of our inpatient dietitians, shared her recipe for gyros using either chicken or turkey, depending on your preference.

A traditional gyro offers a balanced mix of high-quality protein, fresh vegetables and a probiotic-rich sauce. Substituting the traditional lamb or beef with ground turkey or chicken provides a leaner, lower-calorie option.

Turkey Gyros

Ingredients

Serves 6-8
Prep Time: 30 minutes
Total Time: 90 minutes

Gyros

  • 6-8 pitas
  • 1 lb. ground chicken or turkey
  • 1 egg, lightly beaten
  • ½ cup rolled oats
  • ½ onion, diced
  • 1 tbsp grain mustard
  • 1 tbsp olive oil
  • 1-2 tsp garlic
  • 1 tsp thyme
  • 1 tsp dried rosemary
  • 1 tsp dried marjoram
  • 1 tsp Greek oregano
  • 1 tsp black pepper
  • Diced tomato and red onion, if desired

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ¼ cup diced cucumber
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Black pepper, to taste
  • Feta cheese, if desired

Instructions

Step 1.  Preheat oven to 350° Fahrenheit.

Step 2. In a small mixing bowl, combine all tzatziki sauce ingredients and refrigerate.

Step 3. In a medium mixing bowl, mix egg, mustard and spices. Add in the oats and set aside.

Step 4. Sauté the onions in olive oil over medium heat.

Step 5. Combine onions and raw meat with the oats mixture. Mix thoroughly.

Step 6. Press the meat mixture into a medium baking dish. (Amy recommends 7” x 11” so the meat mixture can be cut into thinner strips.)

Step 7. Bake for 40 minutes, uncovered, until fully cooked.

Step 8. Cut into slices, place in a pita and top with your sauce. If using diced tomato and raw onion, add on top.
