Salmon cakes

Amy Ansaldo, RD, LD, one of our inpatient dietitians, shared her recipe for salmon cakes. The nutrient-rich patties are a great source of lean protein, heart-healthy fatty acids and essential vitamins, helping support cardiovascular health and reduce systemic inflammation.

Salmon Cakes

Ingredients

Serves 7-8
Prep Time: 25 minutes
Total Time: 45 minutes

  • Two 16 oz cans of Alaskan salmon
  • 1 medium onion, diced
  • ½ cup of oats
  • 1 egg
  • 1 tbsp lemon juice
  • 1 tsp of horseradish
  • ½ tsp dill
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions

Step 1. In a large mixing bowl, combine eggs, oats, lemon juice, horseradish and spices. Set aside.

Step 2. Sauté onion in olive oil over medium heat until translucent. Add to bowl.

Step 3. Over a colander in the sink, open the salmon can and slide the entire fish out.

Step 4. “Open” the fish by removing the spine and scraping off the skin.

Step 5. Mix thoroughly. Form 3 to 4 oz patties and place on a baking sheet.

Step 6. Bake at 350 degrees for 15 to 20 minutes. You can also pan-fry the patties if preferred.
