When you think of the Super Bowl, you probably also think of buffalo wings.
But what if you’re looking for a healthier alternative?
Amy Ansaldo, RD, LD, one of our inpatient dietitians, recently published a low-sodium cookbook, Happy Taste Buds and Healthy Hearts, featuring a recipe for buffalo cauliflower bites.
“A lot of appetizers revolve around higher-fat meats or high-cheese content,” Ansaldo said. “Trying a vegetable-forward appetizer can boost your fiber intake, while still enjoying the taste of comfort foods you love.”
Buffalo Cauliflower Bites
Ingredients
Serves 8-12, depending on size of cauliflower
- 1 head cauliflower, cut into bite-sized pieces
- 1 cup flour
- 1 cup water
- 2 tablespoons honey
- 3 tablespoons Tabasco (for sauce)
- 1 tablespoon Tabasco (for batter)
- 1 tablespoon white sugar
- 1 teaspoon garlic powder
Instructions
Step 1. Preheat oven to 450°. Line a large baking sheet with parchment paper.
Step 2. In a large bowl, mix flour, water, garlic, and 1 TBS tabasco until thoroughly combined.
Step 3. Toss cauliflower bites into the batter and lay them on the baking sheet in a single layer. (Spread them as much as possible, otherwise they won’t get crispy.)
Step 4. Bake at 450° for 15 minutes.
Step 5. While that is baking, combine Tabasco, honey, and sugar, stirring until thoroughly combined.
Step 6. Remove the baking sheet from the oven and brush the sauce over the cauliflower. (Sometimes I make a double batch of sauce, just saying…)
Step 7. Pop back in the oven for 5 minutes for a sticky coating.
