This kale salad is a favorite at Cheshire’s salad bar. Even self-proclaimed “kale-skeptics” love it! Try this easy recipe at home and you will too.
Why is it so good for you?
A dark green leafy vegetable, kale is a true powerhouse of nutrition — here’s a few reasons why:
- Kale is packed with vitamins and minerals.
 - Kale has high levels of dietary fiber.
 - Kale is low in carbohydrates, sodium, and cholesterol.
 
Ingredients
- 10 ounces raw kale (equals about 1 bunch of kale, but keep in mind that the size of the bunches can vary)
 - 1/4 cup extra virgin olive oil
 - Juice of one lemon
 - 1 garlic clove, finely minced
 - 1/2 cup parmesan, freshly grated
 - Salt and pepper to taste
 
Directions
- Remove ribs and stems from kale.
 - Place all ingredients except for salt and pepper into a large mixing bowl.
 - Using clean hands, massage the kale for about 3-4 minutes (you want the kale to reduce down to about half of what you started with).
 - Taste, add salt and pepper and continue to massage for another few seconds.
 - Taste again and adjust seasoning accordingly.
 - Let rest overnight in the refrigerator.
